I’ve really enjoyed making and using these larger Nakiri chef’s knives. The blade is forged from high carbon 1084. These knives are a really serious upgrade to what you probably have in the kitchen . They are an absolute delight to use! The blade is thin and well balanced to make chopping a breeze. Super duper sharp with carefully considered geometry to keep the handle in the right position to a thin but strong blade that breezes through foodstuffs.
The handle is a pretty piece of spalted beech recovered from a tree that fell at friend’s place in a storm.
High carbon steels like this are the preferred by most serious chef’s though they do need a little more attention than does stainless. After use, they should be washed and dried so they don’t rust. Care instructions are included.
